Andy’s Thai Chicken Adobo

Chef Andy from the Palau Aggressor is a trained chef from the UK. His passion for food has allowed him to travel to many parts of the world where he received inspiration from local culture. He has shared with us a recipe that was created onboard the Palau Aggressor from taking a recipe from our stewardess Agnes, who comes from the Philippines, and adding a Thai inspired twist. We love this dish and hope you do too. 

4 chicken legs

4 chicken thighs

4 Tbls chopped garlic

2 tsp green chili chopped

2 tsp Thai fish sauce

¼ cup white distilled vinegar

1 Tbls black pepper corns crushed

1 Tbls soy sauce

1 Tbls chicken powder

Thai basil or fresh basil

Fry chicken until brown. Add garlic, chili and pepper corns and then all liquid ingredients and reduce. Cook for 20 min or until chicken is cooked. Finish with fresh herbs.
